Fruit mix<br />
4 1/2 cups (total) raspberries & rhubarb mixed<br />
3-5 Tbsp un-refined sugar of your choice (I use coconut sugar)<br />

Crisp mix<br />
1/2 cup quinoa flakes<br />
1/2 quinoa flour<br />
1/2 cup almond meal, ground from raw almonds<br />
1/4 cup packed un-refined sugar of your choice (I use coconut sugar)<br />
pinch sea salt<br />
1/2 cup coconut oil<br />
4 Tbsp vegan butter<br />

<br />
<u>Instructions</u><br />
Preheat oven to 350 degrees.<br />
<br />
Butter 8x8 baking dish.<br />
<br />
Add fruit directly to the dish and toss with sugar (3-5 Tbsp depending on preference).<br />
<br />
Add crisp ingredients to a mixing bowl and, using your hands or a pastry cutter, mix until all of the butter is evenly distributed. Add to the top of the fruit in an even layer.<br />
<br />
Bake for 45-55 minutes or until the fruit is bubbling and the top is crisp and golden brown.<br />
<br />
Let cool for 10 minutes and serve with dairy-free ice cream or coconut whipped cream. (<u>Tip</u>: If you don't find it sweet enough drizzle a little maple syrup on it and add some more nuts. It's delightful)<br />

We live in the country now and that means sometimes running out of stuff and not having a lot of options near buy. I was making taco salad and realized I was totally out of Caralina Dressing. I wasn't about to go to the corner store and pay $5 for a small bottle so I did some googling. I wasn't happy with what I found (recipes full of sugar) so I decided to take notes and make something I was happy with (and I dare to say it's almost healthy for you too!)<br />

Here's my take on Kraft's Catalina Dressing (and after this I'm not going back - this is my new fav)<br />

3/4 cup honey </div>

1 1/2 teaspoons paprika </div>

1 teaspoon onion flakes </div>

1⁄2 cup apple cider vinegar</div>

1/3 cup ketchup (or tomato paste) </div>

Mix it all together in a jar or bottle and you can start using it right away. I like to leave mine sitting on the counter for 2-3 hours first, to really have the flavours come out. Store in the fridge. With the vinegar in it it can store in the fridge for up to 2 months (but I tend to use it up well before then!) </div>

I use this on taco salad, on chicken, with rice, in pulled pork or, as a dip for other veggies. It's got a really nice smoky taste. </div>

<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Bring to a boil</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Reduce to a simmer and cover. Let simmer for 15-20 minutes</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Remove from heat</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Let it cool until it’s a comfortable temperature for straining out the ginger (I find this to be around 4 hours)</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Once you’ve strained your ginger, add your sugar and stir until dissolved</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Once the mixture is cool enough (room temp) add your starter liquid</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Squeeze in your lemon juice </span></li>

<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Put it in a large container (I use a glass jar) and cover with cloth that will keep bugs out (Cheese cloth or a coffee filter works great).</span></li>

<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Watch for bubbles. Once you see those (1-5 days) it’s time to bottle your brew for full carbonation.</span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Pour it into your prepared bottles and seal them (I use snap top glass bottles). Only fill to just below the neck of the bottle. </span></li>
<li style="box-sizing: border-box; list-style-type: decimal;"><span style="font-family: Georgia, Times New Roman, serif;">Keep the bottles at room temperature until they get hard (I find this is 1-3 days - with glass you just should un-snap them and see if it's carbonated) </span></li>

I've tried it both ways but I can't stress enough the difference. With standard ginger you don't have that natural yeast on the peel that you want (also why you can get away with not adding brewers yeast to this recipe) and you might also end up with this chemically taste in your finished ginger beer (due do what they spray on the ginger). With organic ginger it's amazing the difference in flavour, carbonation, and gut reaction (my gut is so much happier with the organic ginger beer). </span><br />
<span style="background-color: white; color: #333333; font-family: Georgia, Times New Roman, serif; font-size: 16px;">- Check the bottles every day - You don't want to over carbonate (remember - the longer it carbonates the more sugar it eats)</span><br />
<span style="background-color: white; color: #333333; font-family: Georgia, Times New Roman, serif; font-size: 16px;">- Leave them to chill for at least 6 hours and then take a taste. </span><br />
<span style="background-color: white; color: #333333; font-family: Georgia, Times New Roman, serif; font-size: 16px;">- Be prepared for massive pressure when you open your bottle! They’ll still ferment in the fridge, and you should periodically check them to see if they’re too pressurized.</span><br />

This recipe might seem a bit more detailed but that's mainly because I just grabbed what I had around and had some fun. <br />

- 1/2 cup brown rice flour<br />
- 1/2 cup quinoa flour<br />
- 3/4 cup coconut flour<br />
- 1/2 cup almond flour<br />
- 1/2 hazelnut "flour"<br />
- 1/2 teaspoon baking soda<br />
- 1/2 teaspoon salt<br />
- 1 teaspoon vanilla<br />
- 1 1/2 cup cooked quinoa<br />
- 1/2 cup maple syrup<br />
- 1/2 cup agave nectar<br />
- 1/3 - 1/2 cup apple sauce<br />
- 2 bananas<br />
- 2 cups dark chocolate chips<br />
- 1/4 - 1/2 cup DF margarine<br />

Mix all the dry ingredients together. Add the apple sauce, bananas, maple syrup, margarine, vanilla and agave nectar. Once the liquors are incorporated add the cooked quinoa. Then add the chocolate chips.<br />
<br />
Heat your oven to 350.<br />

Scoop dough in 1 in balls and place 2cm apart (they will not expand).<br />

Cook 15 - 25 minutes.<br />

- 3 cups flour blend (1 cup quinoa flour, 1 cup brown rice flour, 1 cup coconut flour)<br />
- 11/4 milk (or almond, coconut etc. any type of your choosing)<br />
- 1 teaspoon salt<br />
- 6 tablespoon oil (coconut is preferred)<br />
- 3 teaspoons tapioca flour<br />
- 1/4 cup coconut sugar (or sweetener of choice)<br />

Beat the eggs in a mixing bowl; stir in the milk, vegetable oil, and salt. Whisk in the rice flour until no dry lumps remain. Cover the bowl and let stand at room temperature for 1 hour or in the refrigerator overnight.<br />

Heat a lightly-oiled griddle over medium-high heat.<br />
<br />
Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side. Repeat with remaining batter.<br />

I tried this out for the first time. I'm so hooked on all things key lime after traveling through the Keys. It was such a fun time, and I had to learn how to make this pie!<br />
<br />
I'd say it worked out amazingly. It was my first go, and wow, was it easy!<br />
<br />
I found a good receipt, and adapted it as follows:<br />
<br />
<br />
Crust:<br />
1 1/4 cups graham cracker crumbs<br />
2 tablespoons sugar<br />
5 tablespoons butter, melted<br />
<br />
Filling:<br />
1 (14 ounce) can Sweetened Condensed Milk<br />
2/3 cup fresh lime juice<br />
1/2 cup sour cream<br />
2 teaspoons grated lime peel<br />
<br />
Topping:<br />
1 cup heavy whipping cream<br />
1/4 cup powdered sugar<br />
1/2 teaspoon vanilla extract<br />
<br />
Directions<br />
Heat oven to 325 degrees F. Combine graham cracker crumbs and sugar. Add melted butter and stir until evenly moistened. Press mixture into bottom and sides of a 9-inch pie plate to form crust. Bake 10 minutes or until crust begins to brown. Cool 15 minutes on wire rack.<br />
<br />
Whisk sweetened condensed milk, lime juice and sour cream in large bowl until blended. Stir in lime peel. Pour filling into crust. Bake 10-18 minutes or until tiny bubbles begin to form on surface of pie. Cool completely on wire rack.<br />
<br />
Beat cream, powdered sugar and vanilla in large mixing bowl with electric mixer on medium speed until stiff. Top pie with whipped cream. Chill at least 1 hour before serving. Best served the same day.<br />

I was going through my freezer and forgot I had lemon curd in there (I made it a while ago!). I had a dinner party, and a family lunch the next day so I made a big batch of lemon cake.<br />
<br />
I found <a href="http://www.wilton.com/recipe/Lemon-Cake-1" target="_blank">this recipe</a> and was really excited to make it. I adjusted a few things and make it 100% better (Ha, in my humble opinion, and those of my family, that couldn't get enough of it!)<br />
<br />
<br />
<u>Ingredients</u><br />
3 cups all-purpose flour<br />
1 tablespoon baking powder<br />
1 1/2 teaspoons salt<br />
3/4 cup (1 1/2 sticks) unsalted butter , softened - (I used veggie oil)<br />
2 cups granulated sugar<br />
4 eggs<br />
5 tablespoons lemon juice - (I used 6 tbsp of lemon curd)<br />
1 1/2 teaspoons pure vanilla extract<br />
1 1/2 cups milk<br />
2 tablespoons lemon zest - (I didn't put any in, it was already in the curd)<br />
<br />
<u>Icing</u> - (I doubled the recipe, I love a lot of icing!)<br />
1/4 cup solid vegetable shortening<br />
1/4 cup (1/2 stick) butter , softened<br />
2 tablespoons lemon juice - (I used 2-4 tbsp of lemon curd)<br />
1/2 teaspoon lemon zest - (I didn't use this, it was already in the lemon curd)<br />
2 cups sifted confectioners' sugar<br />
Additional lemon juice or milk , as needed<br />

<br />
<u>Instructions:</u><br />
<br />
Step 1<br />
Preheat oven to 350°F. Spray 10 x 10 in. pan with vegetable pan spray.<br />
<br />
Step 2<br />
In medium bowl, combine flour, baking powder and salt; mix well. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs, lemon juice and vanilla; mix until smooth. Add flour mixture to butter mixture alternately with milk, beating well after each addition. Stir in lemon zest. Place batter in prepared pan.<br />
<br />
Step 3<br />
Bake 30-33 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on cooling rack. Remove from pan; cool completely.<br />
<br />
Step 4<br />
For icing, beat shortening and butter in large bowl with electric mixer until light and fluffy. Add lemon juice and zest; mix well. Gradually add sugar, one cup at a time, beating well on medium speed. If icing is dry, add additional lemon juice or milk and beat at medium speed until light and fluffy. Color as desired with icing color. Ice cake and if desired, garnish with fresh lemon zest curls and mint.<br />

I love peanut butter and chocolate, putting the two together is a baked piece of heaven! So, when I found this recipe I was thrilled. I added even more cocoa then is listed below to make it that much richer, and it really added to the contrast of the peanut butter and chocolate.<br />

If you love either of those two things, and a rich dessert, this recipe is the way to go.<br />

We've made it a few times with friends, and I think it's even become a New Year's Day tradition.<br />

SO, if you haven't tried it, it's a must.<br />
<br />
<u>Ingredients</u><br />
2 cups milk<br />
1 egg, beaten<br />
1 teaspoon vanilla<br />
2 cups all-purpose flour<br />
1 teaspoon salt<br />
1 teaspoon baking soda<br />
1 tablespoon sugar<br />
1/2 stick (4 tablespoons) melted butter<br />
Powdered sugar, for topping<br />

<u>Directions </u><br />
Combine milk, egg, vanilla in a large bowl. In a separate bowl, combine flour, salt, baking soda, and sugar and gradually add to wet ingredients. Beat with a mixer until a smooth batter forms. Fold in melted butter. Pour batter into a funnel or squeeze bottle while using your index finger to stop the flow of the batter. Bring the funnel over the hot oil and release your finger to start a stream of batter while moving the funnel in a circular motion to create spiral-like shapes. Fry for 2 to 3 minutes until golden brown and slightly puffed. Sprinkle with powdered sugar.<br />

I had to be on a very restricted diet, for health reasons, a while back and couldn't find a receipt that fit my needs. I searched through a ton, never found something I liked, and finally just played around until I got it just the way I like it.<br />

I wish I would have written this all out sooner so I apologize if you don't get perfect results but seriously, this stuff is amazing! In fact, I think I might make it again right now!<br />
<br />
<br />
<u>You will need: </u><br />
<br />
1 can coconut milk<br />
<br />
1/2 cup cocoa (you might want to add more, I usually do)<br />
<br />
Coconut Sugar - to taste (I started with 1/4 cup. You could use any sweetener of your choice but I liked this because it 1) Fit within my diet and 2) It helped thicken) <br />
<br />
1/4 cup chia seed (I'll be honest, I didn't measure so it could have been a bit more! Play around :)<br />
<br />
<br />
Throw it all in your Vitamix and blend away.<br />
<br />
I have a Vitamix so it shreds the seeds amazingly well. Some blenders wouldn't cut the seeds so you will end up with little seed crunches (which I don't like).<br />
<br />
If you have trouble with this try putting the coconut milk in first, then the seeds, let it sit for 10 minutes and then blend.<br />
<br />
The mixture will be runny but pore it in a bowl and it should set (as the seeds absorb the liquid).<br />

1 cup icing sugar<br />
1-2 tablespoons milk<br />
<br />
Heat oven to 350F<br />
Combine sugar, butter and beat until it's light and fluffy.<br />
Add vanilla and egg; beat well.<br />
Add flour; mix well.<br />
Spread dough in ungreased 15x10x1 inch baking pan.<br />
Sprinkle half of the pan with the candies fruit and the other half with the chocolate chips and nuts.<br />
Press toppings lightly into the dough.<br />
<br />
Bake for 25-30 minutes or until edges are brown.<br />
Cool for an hour.<br />
<br />
In a small bowl combine icing sugar and milk. Add additional milk if need be.<br />
Blend until smooth.<br />
Drizzle over cooled bars.<br />
Let stand until set.<br />
Cut into bars.<br />
<br />

I couldn’t seem to find this recipe online or in my cooking books either, and well yet again I asked on facebook and I ended up with three different versions. This is the one I like the most and the one I was looking for. I’m going to make it as one of many things for Christmas dinner!<br />

- 1 tub Nutria Whip or Cool Whip<br />
- 1 box Jell-o Powder (flavor of your choice)<br />
- 2 cups Mini Marshmallows<br />
- Can of Pineapple (drained)<br />
- Can of Mandarin Oranges (Drained)<br />
- ½ cup Coconut<br />
<br />
Mix whip cream and Jell-o powder together (leave little behind for sprinkling on top). Mix in mini marshmallows, pineapple (crushed works best), mandarins, and coconut. Scoop into nice bowl. Sprinkle remaining Jel-lo powder on top. Put in fridge to set (2 hours in best).<br />

<li style="font-family: inherit; font-style: inherit; list-style-type: decimal; margin: 0px 0px 0px 30px; padding: 0px; text-decoration: inherit;">Use a mesh hand sieve to sift cocoa into mixture. This prevents lumps. Whisk until the cake batter is smooth.</li>
<li style="font-family: inherit; font-style: inherit; list-style-type: decimal; margin: 0px 0px 0px 30px; padding: 0px; text-decoration: inherit;">Pour batter into prepared pan and bake in preheated oven for about 25 minutes. The center of the cake should be just firm to the touch, but be careful to not overbake the cake or it will be dry.</li>

Let the glaze cool for about 3 minutes before pouring it on the cake.</li>

These cookies are seriously tasty and guess what, no grains! </div>

Ingredients:</h4>
2¼ cups quinoa flour (or 1¼ cups quinoa flour and 1 cup all-purpose flour)<br />
½ tsp baking soda<br />
1 cup butter, softened<br />
¾ cup white or cane sugar<br />
¾ cup packed brown sugar<br />
1 tsp salt<br />
2 tsp pure vanilla extract<br />
2 large eggs<br />
1½ cups semisweet chocolate chips<br />

Directions:</h4>
Preheat the oven to 350°F. Grease a large baking sheet or line with parchment paper.<br />
Mix the flour and baking soda in a small bowl and set aside.<br />
<br />
In a large bowl, blend the butter and sugars until smooth and
fluffy. Add the salt, vanilla and eggs and mix until well blended.
Stir in the flour mixture and blend well. Mix in the chocolate chips.<br />
<br />
Roll the dough into 1-inch balls and place 2 inches apart on the baking sheet.<br />
<br />
Bake on the center oven rack for 8 to 10 minutes. The cookies will
be puffy and soft when removed from the oven, but will flatten when
cooled. Allow the cookies to sit for 1 minute before removing from the
pan to a rack to cool completely. Shore in a sealed container in the
refrigerator for up to 1 week or freeze for up to 1 month.<br />

Instructions</div>

<li class="instruction" itemprop="recipeInstructions">Preheat oven to 375 degrees.</li>
<li class="instruction" itemprop="recipeInstructions">Grease a cast iron
skillet or a 9″ round pan with 2 tsp. coconut or grapeseed oil. Place
the skillet/pan in the oven to heat it up.</li>
<li class="instruction" itemprop="recipeInstructions">Prepare your flax
eggs: combine ground flax seeds with warm water and allow the mixture to
sit and thicken for at least 10 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Mix all of the dry
ingredients together in a large bowl. Add the almond milk, flax eggs,
applesauce, and 1 Tbs. coconut/grapeseed oil (if using coconut oil, make
sure to melt it first). Mix together until combined.</li>
<li class="instruction" itemprop="recipeInstructions">Remove the
skillet/pan from the oven and tilt it around to spread the oil evenly.
Pour the batter into the pan and lightly tap the bottom of the pan on a
hard surface to even out the batter.</li>
<li class="instruction" itemprop="recipeInstructions">Bake for
approximately 40 minutes, or until the edges have turned golden brown.
Allow the flatbread to cool, remove from the pan, and slice.</li>
<li class="instruction" itemprop="recipeInstructions">Top with any
toppings you prefer! For a savory version, you could try macadamia nut
cheese (recipe listed above) or hummus, tomatoes (fresh or sun-dried),
basil, cucumber or zucchini. For a sweet version, you could top with any
kind of nut butter (I prefer almond), jelly, honey, or fresh fruit,
just to name a few. Feel free to get creative!</li>
