Calling all salads!



I'm looking to expand my veggie intact and I love salads but just sort of get stuck with the same thing over and over again.

So what better way to find more options then to get heaps form you!

Add as many as you like, and keep adding, I'll have this open for  along time.

Health Tip of the Week: Work Place Ergonomics


I've been having a lot of trouble lately with my back or arms hurting. On the weekends it’s not so bad because I’m not at work doing all those repetitive things you do in the office.

I was wondering what I could do, or more over what I am doing wrong in how I sit, type, turn, etc.

Baking Goal: Cocoa Brownie with Salted Peanut Butter Frosting

Baking My Way: Maple Date Cookies

This was a cookie that I wasn't too sure I was going to like but I was going to a BBQ so I thought it would be a good fit. But you know what, wow, this is a good cookie and I think you could have even added some bacon! They are really tasty and not too datish like a date square (note: I put less dates then the recipes ask for). I think this cookie has made it to my "will bake again" list. 

Ingredients
1 cup firmly packed brown sugar
3/4 cup margarine or butter, softened
1/2 teaspoon vanilla
1/2 teaspoon maple extract
1 egg
1 1/2 cups All Purpose or Unbleached Flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup finely chopped dates
1/2 cup chopped walnuts or pecans


Directions
In large bowl, beat brown sugar and margarine until light and fluffy. Add vanilla, maple extract and egg; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour, baking powder, baking soda and salt; mix well. Stir in dates and walnuts. Cover with plastic wrap; refrigerate 30 minutes for easier handling.

Heat oven to 350°F. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake at 350°F. for 9 to 12 minutes or until light golden brown.

Easy Potato Salad


I thought with all the BBQs we have it was about time I learned how to make a potato salad.  You know me, I like it if it's easy to do and this recipe is a great example of that! Cheap, easy, and a hit with all my friends! (I haven't tried it on the family yet!)
3/4 cup Mayo
1 tsp. yellow mustard
1/2-1 tsp. salt (taste it, add if you think you need more)
1/8 tsp. pepper
5 cups chopped cooked potatoes
4 hard-cooked eggs, chopped
1 small  onion, finely chopped
2 stalks celery, sliced
1/2 cup chopped sweet pickles 
Mix the first 5 ingredants, then add the rest, let refrigerate a few hours before serving. 
I told you it was easy!
