Baking My Way: Chocolate Cherry Cordial Cookies
I really liked these cookies! I couldn't find any pictures online so I'm not 100% sure if this is what they are supposed to look like but I think they turned out really well.
Cookies:
1/2 cup chocolate chips
1/2 cup firmly packed brown sugar
1/4 cup butter, softened
1 egg
1 cup flour
1/2 teaspoon baking powder
1 (16-oz) jar of maraschino cherries, well drained, reserving 2-3 teaspoons liquid
Frosting:
1/2 cup chocolate chips
2 teaspoons oil
Reserved 2-3 teaspoons cherry liquid
1/4 cup chopped almonds
Cookies:
Heat oven to 350.
Melt chocolate chips in saucepan and stir continually.
In a small bowl combine brown sugar and butter; beat until light and fluffy. Add egg and melted chocolate chips; mix well. Add flour and baking powder; mix well. Cover with plastic wrap; refrigerate 10-15 minutes for easier handling.
Wrap 1 teaspoon dough evenly around each cherry to completely cover. Place 1 inch apart on cookie sheet.
Bake for 10-14 minutes.
Frosting:
In a small saucepan, melt chocolate chips and oil until smooth, stirring constantly. Add enough reserved cherry liquid for desired dripping consistency; beat until smooth. Dip tops of cooled cookies in frosting; sprinkle with almonds.
