Baking My Way: Pillsbury Brown Sugar Shortbread Puffs

This recipe is super easy but can't say that I love the cookies. They're a nice change from the white sugar shortbread but I don't love them. I'm trying all the recipes in the book; that is the point after all, so I was sure I would come to something at some point in baking my way through this book that I didn't love and I guess this is one of those times.

1 cup firmly packed brown sugar
1 1/4 cup butter, softened
1 teaspoon vanilla
1 egg yolk
2 1/4 cups flour

Heat oven to 350.

In a large bowl combine sugar and butter; beat until light and fluffy.

Add vanilla and egg yolk; blend well.

Add flour; stir until mixture forms a smooth dough.

Drop dough in round teaspoonfuls 2inches apart on  ungreased cookie sheet.

Bake for 10-15 minutes or until light golden brown and set.

  4. I think, I would react differently than you because brown sugar is one of my favorite ingredients. If it were up to me, I would put it in everything. I am not sure I have time but I am going to attempt to make these. If I do, I will let you know what I think. I have to do my Dorie baking first though.

Thanks for linking this to Bake with Bizzy.

  5. Oh I feel the same way about brown sugar! that's why it's so strange that I didn't like these! Maybe it was just a bad batch?
