I thought these cookies were pretty good. They really don't have a strong coffee taste so if you're like me (don't drink coffee) you might still like these cookies. They're a nice change to the usual simple crunchy cookie; they have a little something extra with the "java". My husband is a huge coffee snob and he really likes these ones. (make sure to don't over bake because they are much better a little soft and just crispy around the edges)
1 1/2 cup Flour; all-purpose
1 teaspoon Baking powder
1/2 teaspoon Salt
1/2 cup Sugar
1/4 cup Brown sugar; firmly packed
1 tablespoon Instant coffee (devolved in 2 tablespoon hot water)
3/4 cup Butter; softened
1 Egg
1 1/2 cup Flaked coconut
Pre-heat oven to 350 degrees. In large bowl combine all
ingredients except coconut. Blend well with mixer. Stir in coconut;
mix thoroughly.
Drop by rounded teaspoon onto ungreased cookie sheets. Bake at
350 degrees for 10 to 12 minutes. Cool. Makes 36 to 42 cookies.
