Baking My Way: Triple Chocolate Strip Cookies

These cookies are seriously decadent and ultra chocolatey. They are a wonderful cookie. I could eat so many of them but they are so rich I try to just keep it to one at a time! They bake flat (or at least mine did!) similar to biscotti but at not double baked so they are still very soft and chewy.


Cookies
2 cup Flour
1/2 cup Cocoa; unsweetened
1/2 teaspoon Baking soda
1/4 teaspoon Salt
3/4 cup Sugar
1/2 cup Brown sugar; firmly packed
3/4 cup Margarine; softened
2 Eggs
2 cups Chocolate chips

White Chocolate Glaze
1/4 cup white chocolate chips

Dark Chocolate Glaze
1/4 cup semi-sweet chocolate
1/2 teaspoon butter


Heat oven to 350 degrees. Lightly grease 2 cookie sheets. Lightly spoon flour into measuring cup; level off.

In medium bowl, combine flour, cocoa, baking soda and salt; set aside. In large bowl, beat sugar, brown sugar and margarine until light and fluffy.

Add eggs; blend well. Stir in flour mixture; mix well. Stir in chocolate chips. Divide dough into four equal portions. Shape each portion into a 12 x 1-1/2 inch roll. Place 2 rolls, 2 inches apart a prepared cookie sheet.

Bake at 350 degrees for 14 to 18 minutes or until toothpick inserted in center of roll comes out almost clean. Remove from cookie sheets; cool on wire rack 10 minutes.

Melt white chocolate, drizzle over rolls. Repeat with the dark chocolate.

Cut rolls on the diagonal into 1 inch wide strips. Makes 4 dozen.
