Summer Salads

I often stick with what I know so I thought I would find some really great options and make myself try them. Here's what I've found so far and man I can't wait to try all of these!

Bacon Broccoli Coleslaw Salad

I had this at someone's house and thought it was a wonderful idea! I mean how much do I like coleslaw? Not much at all, but with bacon? Oh you bet I ate that! I couldn't find a recipe that was similar so I made one.

Salad:
1 bag of broccoli coleslaw mix
1/4-1/2 cup cooked chopped up bacon
Dressing (below)

Dressing:

1/2 cup plain yogurt
2 tablespoon Dijon mustard
1 tablespoon fat-free mayonnaise
2 teaspoons sugar
salt and pepper, to taste

Mix all ingredients together and let sit in the fridge for an hour to enhance the flavor.
