My garden produced SO many zucchini this year and I was on a mission to not let it go to waste :) I even have the freezer stocked to hopefully make more Strawberry Zucchini Marmalade around Christmas. It sounds odd, but very tasty, and pretty - it's red with flecks of green - perfect for the holidays!
