ReplyDeleteThanks for the note letting me know you've included my recipe in your features from last week. To my Chicken Parmesan recipe I want to add that this weekend I tried Eggplant along with the chicken and it was tasty too ... a little challenging at times to get the breading to stick so I just placed the eggplant in the cooking dish and patted on the breading, but it was good. Used about 1/2" thick eggplant slices. So this recipe can now be prepared as a meatless entree as well!
Can't wait to check out this weeks recipes :)
