Sorry for the serious delay today. I was caught up in some Christmas decor fun and was just too interested in this!

    Thanks for the note letting me know you've included my recipe in your features from last week. To my Chicken Parmesan recipe I want to add that this weekend I tried Eggplant along with the chicken and it was tasty too ... a little challenging at times to get the breading to stick so I just placed the eggplant in the cooking dish and patted on the breading, but it was good. Used about 1/2" thick eggplant slices. So this recipe can now be prepared as a meatless entree as well!

    Can't wait to check out this weeks recipes :)
